Currently, I’m dreaming of spring. I’m imagining a spring brunch with all my favorite people sitting around a backyard picnic table and drinking a refreshing fruity cocktail.
Doesn’t that sound divine?
While it’s still the middle of winter, I’m already starting to plan my gatherings. It’s nice to have something to look forward to!
I Love to Host
Hosting is one of my favorite things to do. We love getting together with all our friends and family for a good meal and, of course, a delicious cocktail!
As a serial hostess, I’ve learned that when you host guests at your home, it’s best to serve easy-to-make dishes. The last thing you want to do when you’re hosting is to be stuck in the kitchen creating an elaborate meal or trying to fix complicated drinks.
Super Simple Spring-Simple Cocktail Recipes
These super simple recipes are filled with springtime fruits and other seasonal flavors that will delight your taste buds. And don’t feel like you have to wait for spring to try these– in fact, better to try them all now, so you know exactly how delicious they are. You know, to be a better host, of course.
Mezcal Aperol Spritz
A twist on a classic Aperol Spritz, this drink is an excellent transition from winter to spring. Aperol is a sweet, bitter orange flavor that tastes exactly like sunshine, while Mezcal has a smokey, almost firelike quality to it. Plus, the color of these ingredients looks like a blooming flower.
Instructions:
Fill stem balloon glass (or wine glass) with ice
Pour in mezcal, Aperol, and grapefruit juice.
Top with soda water. Stir well.
Garnish with an orange wheel.
Enjoy!
Ingredients:
2 oz. Mezcal
2 oz. Aperol
2 oz. Grapefruit juice
Soda water

Strawberry Mule
This classic drink gets a springtime twist with freshly muddled strawberries. Mules make the perfect drink for entertaining. This recipe is very forgiving, thanks to the sharp ginger beer, so there is no need to worry about tending the bar all night. Simply set out the prepared ingredients, display the recipe on a cute sign, and arrange the copper mugs for your guests.
Instructions:
Muddle chopped strawberries in a copper mug
Squeeze half the lime into the mixture. Muddle well.
Add crushed ice & vodka
Top with ginger beer
Garnish with a fresh strawberry + lime wheel
Enjoy!
Ingredients:
2 large strawberries
1 lime
2 oz. Vodka
Ice
Watermelon Paloma
There are few things in life as delicious as the combination of Tajin and watermelon. Tajin is a chili and lime-flavored seasoning that goes surprisingly well with the sweetness of the watermelon. If you haven’t tried this combo before, I guarantee it will be love at first sip.
Instructions:
In a cocktail shaker, add watermelon syrup, grapefruit juice, and mezcal. Shake well.
Round the mouth of a glass with lime, and dip in Tajin.
Add ice to the glass.
Pour the cocktail into the glass and top off with soda water.
Garnish with a lime wheel.
Enjoy!
Ingredients:
1.5 oz. Torani watermelon syrup
1 oz. Grapefruit juice
2 oz. Mezcal
soda water

Pomegranate Peach Lemon Drop
If you love lemon drops, you’ve got to try this variation. Pomegranate is both sweet and tart, mimicking the peach flavor's sweetness and the lemon juice's tartness for a burst of fruity flavor. If you want to impress your friends, try serving these in chilled martini glasses with a sugar-coated rim.
Instructions:
In a cocktail shaker, add peach syrup, pomegranate juice, vodka, lemon juice, and ice. Shake well.
Pour into glass.
Garnish with a lemon wheel.
Enjoy!
Ingredients:
1 oz. Torani peach syrup
1 oz. Pomegranate juice
2 oz. Vodka
1 oz. Fresh lemon juice
Ice
Pomegranate Amarena Spritz
Unlike their cousin, the maraschino cherry, the Amarena variety of cherry is dark and crisp, with a complexly sweet then sour flavor. The cherries would be the perfect accompaniment to traditional breakfast foods, so if you’re planning a brunch, consider making a large batch of this to serve your guests.
Instructions:
In a wine glass or champagne flute, add ice, pomegranate juice, and Amarena syrup.
Add prosecco. Top with soda water.
Garnish with a lemon wheel and Amarena Cherries.
Enjoy!
Ingredients:
1 oz. Pomegranate juice
4 oz. Amarena syrup
180 ml prosecco
soda water
Amarena cherries
Ice
